PAPAYA AMBROSIA WITH GINGER DRESSING

Ingredients:

  • 2/3 cup plain yogurt                                         
  • ¼ cup chopped walnuts or almonds                      
  • 1 tsp honey                                                            
  • 1 tsp. fresh ginger, minced                                      
  • 1 papaya, peeled, seeded, cut into chunks              
  • 1 cup seedless grapes, halved                              
  • 1 pear, cored & cut into chunks

Directions:

In a small bowl, stir together yogurt, nuts, honey, and minced ginger. Combine papaya, grapes, and pear chunks; toss lightly to spoon dressing over to combine. Chill 1-2 hours before serving.
